These are some of our favorites from throughout the years at Texas Table Top. I’ve also included some ideas for modifications and substitutions in case some of the ingredients aren’t on hand. Use the recipes as a base and get creative!

King Ranch chicken casserole
A Texas comfort food classic. This also will work with canned chicken or leftover chopped-up chicken. And if you don’t have corn tortillas, use flour tortillas or crushed tortilla chips.

Slow cooker chicken tacos
This recipe is quick and easy, and it’s also low-carb if you skip the tortillas. If you are short on time, try this with already-cooked or canned chicken. Just make it in a pot on top of the stove and add a bit of liquid, like broth or water, if it looks too dry.

Chicken a la Julie
Basic but not boring! Ranch dressing, cheese and chicken combine for a quick, no-fuss main dish.

Hazel’s chicken salad
This is great for lunch or dinner. Canned chicken is a fine substitute. No yogurt on hand? Thin sour cream with a little milk. Then, add sugar and vanilla to taste.

Skillet chicken and rice
A quicker version of a Southern favorite. Skip the mushrooms if you’re not a fan.

Chicken taquitos
If frying isn’t your thing, try baking these on a cookie sheet in the oven at 375° until the filling is hot and the outsides are lightly browned.

Oven-fried chicken
Another classic chicken dinner! Regular milk also will work, or add a spoonful of lemon juice to regular milk to make “quick buttermilk.” Substitute crushed crackers for cornflakes if you need to.

Chicken pot pie
Want to impress the family? Make a homemade chicken pot pie. We won’t tell them the pie crust isn’t homemade, if you don’t! If you don’t have any frozen or refrigerated pie crust dough, you can make the filling in a casserole dish and substitute canned biscuits on top. Just use the oven temperature from the biscuit cooking instructions, so they don’t burn.

Chicken tortilla soup
Have you ever heard of a “kitchen sink” recipe, where pretty much anything but the kitchen sink goes? This is that kind of recipe. As long as you have some chicken, tortillas or tortilla chips and the seasonings, you have the basics covered. Substitute frozen zucchini or other vegetables for the corn, omit the black beans or use canned pinto beans…there are no rules here!

Spicy peach grilled chicken
Sweet with just a touch of heat. You don’t have to use chicken quarters in this recipe. Any chicken cuts will do! It can also be made in the oven. Line a baking sheet with foil and bake at 350° for 45 minutes or until a meat thermometer inserted into the thickest part of the meat reads 165°.
