As I mentioned, Texas rice farmers make the best rice dishes. I learned last week as a judge of the Colorado County Rice Dish Contest that the fine Texas rice farmers down there really know how to make a good thing—Texas rice—even better. The grand prize went to Colorado County Farm Bureau member Helen Pavlicek for her Rice Meat Patties. One bite of this recipe, and I knew we had a winner.
In honor of Helen’s delicious rice dish, I thought I’d try it at home and then share it with our Texas Table Top readers. This recipe was a hit at our house, and I’m sure it will be at yours, too.
For Rice Meat Patties, you will need:
1 egg
1/3 cup milk
1-1/2 tsp. salt
1/4 tsp. pepper
1-1/2 cups cooked rice
1 medium onion, minced
1-1/2 lbs. ground beef
1 (10 oz.) can cream of mushroom soup
8 slices bacon, uncooked
Start by pre-heating your oven to 350 degrees F. Beat one egg, and then mix in the milk, salt and pepper.
Add your cooked rice to the egg mixture.
Next, add the ground beef and onion. You can mix it with a spoon, but I found it easier to combine the ingredients with my hands (which I washed before and after, of course).
Form the beef and rice mixture into eight round patties and place in a greased 9-by-13-inch glass baking dish.
Wrap each patty with one slice of uncooked bacon. I made an “X” with the bacon to cover more of the patty, but you can wrap it however you like.
In a separate bowl, blend together your can of cream of mushroom soup with one soup can of hot water. When the soup is completely blended, pour it evenly over the patties.
Bake in the oven at 350 degrees F for 45 minutes. Remove from the oven and serve!
