A day of football and food. The Big Game is Sunday, and family and friends will get together and cheer for their favorite team.
The food, however, is almost as important as the game. Some might say even more important. I guess it depends if your team is playing. Either way, I’m rooting for agriculture.
From game day food, like today’s recipe, to cotton for championship t-shirts, agriculture is truly the winning team. Did you know a football field is 1.3 acres? That means Texas has the equivalent of nearly 100 million football fields in farm and ranch lands. And our Texas farmers and ranchers provide plenty of products for our favorite game day meals.
From dips to sliders and from wings to pickles, Texas farmers have you covered.
But my favorite pregame, during and postgame snack is a recipe I call armadillo eggs.
For Armadillo Eggs, you will need…
1 lb. sausage (I use maple-flavored sausage, but original is fine)
8 small-medium jalapeno peppers
8 oz. cream cheese
1 packet bread crumbs
Preheat the oven to 350 degrees.
Before you begin, let me recommend wearing food-prep gloves. This will come in handy dealing with the jalapenos.
Start by rinsing the peppers. Once you have them cleaned, cut off the stem and make one cut down to the tip. Take a spoon and carefully core the jalapenos.
Using a knife (butter knife works great), pack the cream cheese into the peppers.
Next, mold the sausage around the pepper. Don’t make it too thick, but cover the pepper entirely.
Roll the sausage-covered peppers into the bread crumbs. Place the pepper onto the cooking tray.
Place the cooking tray in the oven. Cook for 25 minutes or until sausage is fully cooked.
