The lights are hung. The trees are being trimmed. And we are decking the halls. It’s Christmas time in Texas.
With the holiday decorating, comes holiday parties and holiday baking. ‘Tis the season after all! I like to have a treat that most guests, young and old, will enjoy. One of my favorites is cookies. Shortbread Cookies are always a hit, and Everything Cookies have something for everyone.
This year, my daughter wants to help decorate the cookies, so we came up with a plan to make these.
For Gingerbread Cookies, you will need…
4 c. flour
1 c. brown sugar, packed
1 egg
3/4 c butter, softened
3/4 c. molasses
2 tsp. ground ginger
1 1/2 tsp. baking soda
1 1/2 tsp. ground cinnamon
3/4 tsp. ground cloves
1/4 tsp. salt
There are a lot of decorating and shape options for Gingerbread Cookies, but we decided on the classic design of a Gingerbread Man with white icing and red hot buttons. You could also make Christmas trees, stars or even reindeer with little red noses.
Start by preheating your oven to 350 degrees. Mix together the butter and sugar in a big bowl until fluffy. Then, mix in the egg and molasses until everything is combined.
In a second bowl, stir together the dry ingredients and slowly mix them in with the butter mixture, making sure to get everything well mixed. Once it’s all combined, cover and chill in the refrigerator for one hour.
Now that the dough is chilled, turn it out onto a floured surface and roll it out to 1/8 inch thick.
Choose your design and cut the cookies out. You will want to place them about one inch apart on a lined baking sheet and bake for 10 minutes or until the edges begin to crisp.
Allow the cookies to cool on a wire rack and then decorate before serving.
This is a great recipe for little hands and imaginations. And the classic Gingerbread flavor is sure to make for holiday memories for years to come. Taking a few extra minutes for homemade can make for a memorable holiday tradition. From all of us at Texas Table Top, enjoy!

- Slowly combine the wet and dry ingredients into one bowl.
- Cover and refrigerate one hour.
- Roll the chilled dough onto a flour surface to a 1/8 inch thickness.
- Cut the cookies out and place them on a lined baking sheet 1 inch apart.
- Bake for 10 minutes or until edges are crisp.
- Cool and decorate.
