Ah, a holiday weekend! It’s a time to enjoy friends and family, play in the sprinklers and cook out. It’s also a time I don’t want to be stuck in my kitchen or inside at all, for that matter. But, with every good cookout, there needs to be a dessert. Something quick and easy.

Being a southern girl, the 4th of July weekend means BBQ with all the fixin’s, watermelon and homemade cobbler and ice cream. My favorite was always the cobbler, but it took so long for my Grandmama Willie Mae to make it. The crust, syrup and cutting the fruit always took so long. So this week, I decided that a Strawberry Cobbler Cake might be in order. There isn’t a fancy crust to make or even syrup to deal with.

For Strawberry Cobbler Cake, you will need…Strawberry Cobbler Cake
1 cup self-rising flour
1 cup sugar
1/2 tsp. ground cardamom
1 cup milk
1/2 cup unsalted butter, melted
2 cups strawberries, sliced
2 tbsp. unsalted butter
Sugar for sprinkling

My favorite part of cobbler has always been the fruit and the crust. I really don’t care for all of the syrupy juice. Don’t get me wrong, that part is great over a bowl of homemade vanilla ice cream, but other than that, I really don’t care for it. This recipe takes that part out and still gives you a sweet, doughy and moist cake.

First things, first. Preheat your oven to 350 degrees Fahrenheit. In a medium-sized bowl, mix together the flour, sugar and cardamom.

Then, add in the milk, stirring well to combine and remove any lumps. Pour in the melted butter and combine well.

Using the additional butter, grease the inside of an 8-inch-by-8-inch baking dish. Then pour in your batter.

Finally, top with the sliced strawberries and sprinkle with the remaining sugar. Bake for 1 hour or until crisp and golden.

See, no fuss, no muss! Ten minutes in the kitchen and then let it bake for an hour. When the cake is done, it is sweet and buttery and full of beautiful strawberries. How easy is that?
