We eat a ton of fresh fruits and vegetables at my house, and I’m always looking for new ways to prepare and serve them. This week, Texas Table Top‘s Amanda Hill was nice enough to share her favorite fruit dip recipe with me. My family taste-tested the Brown Sugar Fruit Dip on Sunday evening, and everyone–including my two-year-old–went back for seconds, thirds, fourths… Well, you get the picture. This fruit dip is light and fluffy and would be great for anything from an evening snack to a backyard BBQ to a baby shower.

For Brown Sugar Fruit Dip, you will need…ingredients
1 8-oz. brick cream cheese, softened
½ cup packed brown sugar
1 cup sour cream
1 teaspoon vanilla extract
1 cup whipped topping

This recipe literally takes five minutes to make. First, using an electric or stand mixer, whip together mixingthe cream cheese and brown sugar until well blended. Make sure to scrape down the sides of your bowl so you get all of the cream cheese mixed in. The mixture will turn a light golden brown when it is ready. Now add your sour cream and vanilla extract. I added both of these at the same time to avoid overmixing the cream cheese and brown sugar. Otherwise, the mixture would become too soft. Finally, fold in your whipped topping.

That’s it! How simple is that? Now comes the hard part. You’re mixedsupposed to let it rest for four hours in the refrigerator before serving. So you might want to make it the night before and put it in the refrigerator right before bed so you aren’t tempted to eat it right away like I was. This dip is perfect for practically any type of fruit–strawberries, blueberries, grapes, pineapple and even peaches.

Speaking of peaches, I heard an interesting fact about the sweet little ones we have in Texas right now. Many of the areas in Texas where peaches are grown are experiencing really bad drought conditions. While visiting a roadside stand in Stonewall over the Fourth of July weekend, I found out that the drought has actually made the peaches from West Texas sweeter this year. They are smaller than the peaches from East Texas where they’ve had more rain, but because the West Texas ones are smaller, the sugar content is higher.

fruit and dipI think all peaches are yummy, but I got both kinds to see if I could tell the difference. Sure enough, I could! I wish I could remember her name, but thank you to the young lady at that stand in Stonewall for teaching me something new about one of my favorite fruits.
