Have you ever had something stuck in your head and it just won’t get out…like a song, an idea or even a recipe?  This seems to happen to me constantly.  If it is a song, I have to sing it out loud before I can get it out.  An idea, yep, I have to write it down or type it into my phone.  I just can’t seem to focus once something gets stuck in there.  I guess you could call this a character flaw.

March 20 was the official beginning of spring. The trees are budding, and the flowers are beginning to bloom. The summer vegetables are starting their journey. There is a spring fruit that’s in full glory right now, though—the avocado. Right now, they are readily available and at a good price!

Avocados  have some major health benefits, as well. They are low in cholesterol and high in vitamin E and fiber. Although high in fat, it is the good fat that your body needs.  And they are super yummy.

This time of year as the weather turns colder (well, in Texas, just the days it decides to feel like winter), one of my favorite comfort foods is a good, warm soup or stew. Late last week, I was feeling a bit under the weather and decided to make Caldo de Res, or beef soup, that I used to order all the time when I lived in Seguin.

One of the great things about Caldo de Res and Caldo de Pollo (chicken soup) is that it is versatile. Everyone makes it a little bit differently, but here’s how I make mine. I hope you enjoy it.

The new year has started, and it’s time to start following our New Year’s resolutions. What are you planning to do? Eat healthier, work out more or maybe cook more?

Mine is to cook more. You may think I cook constantly, but I really don’t. With the convenience of restaurants and fast food, many of us don’t cook like our parents or grandparents used to. I plan to change that at our house this year. What better way to start than with Spaghetti Pie, a recipe to honor National Spaghetti Day today.

Beef Stew is such a hearty and warming meal. Did you know there are more than 90 different types of stew made around the world? The basics of stew are chunks of meat with a broth and vegetables. It is an easy meal to make and can feed several people—perfect for a big family.

My mom used to make stew for us when we wouldn’t eat our vegetables. She would take stew meat, broth and whatever leftover vegetables we had and simmer them together to make a stew. It worked! I would eat everything in the bowl. Fortunately, Butters likes veggies way more than I did growing up, but I still like the idea of sneaking in some of the ones she might not eat otherwise.
