Camping is a popular pastime during the Texas summer.

We have so many neat places to see and visit. Lakes to fish and swim in. Trails to hike and explore. And of course, just the opportunity to get out in nature and relax.

Another great thing about camping? S’mores. Those warm, gooey marshmallows sandwiched between two graham crackers and perfectly complemented by a plain chocolate bar. But alas, summer is coming to an end, and the dry weather is just not suitable for camp fires this year.

But this recipe is sure to bring a smile to your face!

For S’mores Cookie Bars, you will need…
4 (1.5 oz.) chocolate bars
1 1/2 c. graham cracker crumbs
1 1/2 c. flour
1 c. packed light brown sugar
1 jar marshmallow crème
1 egg
3/4 c. butter, softened
2 tsp. vanilla extract
3/4 tsp. baking powder

The only thing these s’mores are missing is the char from the fire, but it certainly doesn’t lack in flavor. And if you reheat them in the microwave for a few seconds, it melts down just like it came out of the fire.

Start by preheating your oven to 350 degrees. While the oven is heating, combine the butter and sugar in a large bowl until creamy. Then mix in the egg and vanilla.

In a second bowl, stir together flour, graham cracker crumbs and baking powder. Once combined, slowly add the dry ingredients into the wet ingredients and mix well.

Spray an 8×8 square baking pan with non-stick spray on the sides and bottom to prevent sticking. Press half of the graham cookie dough into the prepared pan.

Spread the marshmallow crème cover the cookie layer, and top the marshmallow layer with the chocolate bars.

Spread the remaining cookie dough over the chocolate bars. Bake for 30 minutes or until golden brown. You’ll want to let them cool slightly before cutting them to avoid losing the warm, melted center.

Instructions

  3. Mix in the egg and vanilla.
  4. In a second bowl, stir together flour, graham cracker crumbs, and baking powder.
  5. Slowly add the dry ingredients into the wet ingredients and continue to mix until everything is combined.
  6. Spray an 8x8 square baking pan with non-stick spray on the sides and bottom to prevent sticking.
  7. Press half of the graham cookie dough into prepared pan.
  8. Spread the marshmallow crème on top.
  9. Top the marshmallow layer with the chocolate bars.
  10. Spread the remaining dough over the chocolate bars.
  11. Bake the bars for 30 minutes, or until golden brown.
  12. Cool before cutting into squares.
