I love cheese. There, I said it. And I, along with many other Texans, am very excited for National Cheese Lovers Day. From Grilled Cheese sandwiches to Three Cheese Enchiladas or Macaroni and Cheese, there are so many recipes to make with cheese.
Cheese is pretty versatile, too. You can use it as a main ingredient or to add flavor and texture. And it’s good in everything from breakfast all the way to supper.
I must say, though, my favorite thing about cheese is the number or types and varieties. Today, we’re working with two of them.
For Cheese Logs, you will need…
2 pkg. cream cheese, softened
2 c. sharp cheddar cheese, grated
1 1/2 c. pecans, chopped
2 tbsp. mayonnaise
1 tbsp. onion, diced
1 tbsp. red bell pepper, diced
2 tsp. Worcestershire sauce
1 tsp. liquid smoke
1/2 tsp. cayenne pepper
Salt and pepper to taste
This recipe takes mere moments to make. And the flavors are oh so good. And it gets even better with the amount of time you let is sit chilling. Two hours is just about perfect in my opinion.
Whip the cream cheese with a hand mixer. Then add all ingredients, except pecans, in a bowl until well combined.
Divide contents between two pieces of plastic wrap and roll into a log shape. Place in the refrigerator for 30 minutes to firm up.
Once set, roll the logs in nuts and then cut into two sections each. Rewrap the logs and twist and fold ends to keep packets sealed. Leave chilling in the refrigerator until ready to serve.
This recipe is great for parties or game night and will add some extra flavor to your favorite crackers or veggies. Everything is better with a sprinkle or more of cheese. From all of us at Texas Table Top, enjoy!

- Roll into log shape approximately 1.5" to 2” diameter and put in refrigerator around 30 minutes.
- Take out of refrigerator and unwrap.
- Roll in pecans and then cut into two sections each.
- Re-wrap in plastic wrap and twist and fold ends to keep packets sealed.
- Chill in refrigerator until ready to serve.
