Bright red and full of sweet juicy goodness, strawberries are a mainstay in Texas this time of year. They’re so popular in the quiet town of Poteet that they dedicate three days to celebrating them in April.
This year, the Poteet Strawberry Festival will be April 7-9. Everything from jams and breads to pies and muffins all made with those little red berries. Just in case you can’t make it to the festival, I want to give you a recipe to try with strawberries to share in the experience.
For Strawberry Bread Pudding, you will need…
4 eggs
6 c. day-old French bread, cubed
2 c. fresh strawberries, sliced
1 c. milk
1 c. heavy cream
1 c. sugar, plus 1 tbsp. for sprinkling
1 ½ tsp. vanilla
2 tsp. cinnamon
1/2 tsp. ginger
butter for coating baking dish
Bread pudding is not pudding at all. At least not in the traditional sense. It’s savory bread mixed with a sweet milk custard and baked until crispy on the outside and melt-in-your-mouth good on the inside. Add strawberries and you have yourself a true berry delight.
Start by preheating your oven to 350 degrees. While the oven is heating, whisk together the eggs, dairy, vanilla, sugar and spices in a small bowl to make a custard.
Pour the custard mixture over the bread cubes in a larger bowl. Gently toss the bread to make sure everything is covered. Let it sit for a few minutes while you butter your 8×8 baking dish.
Add the strawberries to the bread mixture, folding in so the bread doesn’t break up too much more.
Move the bread pudding into the prepared baking dish and sprinkle with additional sugar.
Bake for 45 minutes until golden. It may be just a bit soft in the center, so let it sit for 10 minutes before serving so the center can set.

- Preheat oven to 350 degrees.
- In a small bowl, whisk together the eggs, dairy, sugars, extract and spices.
- Pour custard mixture over the bread, gently stirring to combine.
- Allow the liquid to soak into the bread for about 5 minutes.
- Fold in the strawberries.
- Move the mixture to a buttered 8x8 baking dish.
- Bake for 45 minutes until puffy and golden.
- Let cool for 10 minutes for the center to set before serving.
