Sometimes I worry that sitting down with the family for a meal is slowly fading away. With busy schedules and the advent of easier-than-ever food choices, I find myself drawn into the hype of grab-and-go meals. But supper is still family time in my house.

We talk. Laugh. Share our stories from the day. All while eating a tasty meal.

And to bring our family together, I like to fix some of the foods I remember from my childhood. Dishes that my mom and grandmothers cooked when we all sat down at the table together. Things like pot roast, meatloaf or a side dish like this week’s recipe.

For Green Beans with New Potatoes, you will need…green beans with new potatoes
2 lb. green beans, washed and trimmed
2 lb. small new potatoes, washed
20-25 pearl onions
4 strips bacon
2 tbsp. beef bouillon
1/2 tsp. salt
1 tsp. pepper
16 c. water

It’s super simple and comes together quickly. And it brings back memories of eating this dish for Sunday lunch growing up. It just might bring back memories for you, too.

Start by chopping the bacon into large pieces and frying it in the bottom of a large stock pot.

While the bacon is cooking, remove the skin from your pearl onions. Be sure to leave the onions whole, if possible, though.

Fill the stock pot with all of the water and add the bouillon, salt and pepper.

Stir in the beans, potatoes and onions to the water and bring to a boil. Let the beans simmer for about 30 minutes. Serve warm.

These classic beans remind me how important it is to spend time with family and make sure they know how much you care. You don’t have to be in the kitchen all day. Cooking with fresh ingredients can sometimes be the most convenient option. From all of us at Texas Table Top, enjoy!

Instructions
  1. Chop bacon into large pieces.
  2. Fry bacon in stock pot.
  3. Skin onions.
  4. Add water to stock pot.
  5. Add seasoning to stock pot.
  6. Add vegetables to stock pot.
  7. Bring to a boil and let simmer for 30 minutes.
  8. Serve warm.
