I love getting new ideas for the Texas Table Top blog. Sometimes they come from friends or family, sometimes they come from people who have been one of the lucky tasters from previous weeks, and this one came direct to you this week from one of the Texas Farm Bureau Public Relations staffers.
When looking for ideas, I like to ask my co-workers what they would like to see me make. This time, Angela, in our graphics area, had a great idea for something with Key lime. They just scream warm weather and sunshine. I am so glad she came up with that so I could make these for you this week.
For Key Lime White Chocolate Chip Cookies, you will need…
1 cup butter, softened
1 1/4 cups light brown sugar
½ tsp. vanilla
2 eggs
2 tsp. Key lime juice
2 tbsp. Key lime zest
2 ½ cups flour
1 tsp. baking soda
¼ tsp. salt
2 cups white chocolate chips
I really can’t think of anything better that says warmer weather than Key limes. And though they are not a big commodity in Texas, they are grown here. Put with that some lovely white chocolate and you have a refreshing treat for spring.
First things, first. Preheat your oven to 350 degrees. While your oven is heating, cream together the softened butter with the brown sugar and vanilla, just until fluffy. You don’t want to melt the butter.
Mix in the eggs and, once combined, add in the lime juice and zest.
In a separate bowl, stir together the flour, baking soda and salt. Then slowly add it to the wet ingredients, mixing the entire time.
Now you can stir in the white chocolate chips. These add such a wonderful, subtle flavor to cookies. Scoop the cookies onto a lined baking sheet and bake for 16-18 minutes or until golden.
See, a classic cookie with a ton of flavor. I really hope you enjoy this recipe Angela inspired and that you will share some of your recipe or ideas with me, too. From all of us at Texas Table Top, enjoy!
