It truly is the most wonderful, yet busy, time of the year. With holiday parties and shopping for gifts, in addition to keeping up with everyday life, it can be challenging for even the most organized person.

I love to throw parties. I can plan for months for one night. Daniel and I have a yearly party with some of our closest friends around this time. And even though I haven’t finished the details yet, I know the party with go off without a hitch this weekend.

Food always is a big part of any party we throw. I like to mix new and exciting dishes with some of the old standbys. One of my favorite standbys is Penny’s Cheese Ball.

For Penny’s Cheese Ball, you will need…Penny's Cheese Ball
2 pkg. (8 oz.) cream cheese, softened
1 bunch green onions, chopped
1 jar dried beef, half rinsed
1 cup pecan pieces, chopped

One of my biggest goals when serving for a party is to get everything prepped in advance and make it easy for my guests to enjoy. This cheese ball fits the bill for both. I received this recipe years ago from Penny Cox in the Texas Farm Bureau Public Relations division. See, I was looking for something different for a party and wanted to make a cheese ball. Penny definitely came through for me with this recipe.

First things, first. Remove half of the dried beef from the jar and rinse with water. Add to the rest of the dried beef and cut up into small pieces.

Then, in a large bowl, combine the softened cream cheese with the dried beef, mixing well.

Once combined, mix in the chopped green onions. Then move the mixture to the refrigerator to chill for approximately one hour.

Finally, once the mixture is chilled, form it into a ball and roll it in the pecan pieces to coat. Refrigerate until you are ready to serve.

Penny's Cheese Ball
