Summer is flying by! Or driving as the case might be. Many Texans are taking to the roads to explore the Lone Star State and the rest of our great nation.
I remember riding in the car for many miles during the summer when I was growing up. And we always packed snacks. So this week, we’re going to make a tasty homemade treat for trips here and there.
For Trail Mix, you will need…
3 c. rolled oats
2 c. pecans
1 c. dried cranberries
1 c. coconut flakes, unsweetened
1 c. chocolate chips
1/2 c. sunflower seeds
3 tbsp. honey
2 tbsp. canola oil
2 tsp. vanilla
1/2 tsp. salt
Trail mix should have three main components. Something sweet, salty and crunchy.
Start by preheating your oven to 325 degrees. While the oven is heating, mix together the oats, nuts, fruit and seeds in a large bowl. Don’t add the chocolate chips yet. Of course, you can change the nuts for something else. But as a proud Texan, I prefer pecans.
In a second smaller bowl, mix together the honey, oil, vanilla and salt. Then pour it over the dry ingredients and stir to get everything wet.
Spread the mixture out onto a lined baking sheet and bake for 30 minutes at 10 minutes increments, stirring to make sure everything toasts evenly. Set it aside to cool completely once everything is toasted.
Finally, stir in the chocolate chips and store in an airtight container for up to two weeks.
