I wouldn’t touch a salad when I was a kid. I thought it was yucky. No amount of ranch dressing or cheese would make me want to eat it. Nowadays, I can’t seem to get enough of it. Maybe my body is trying to play catch-up to years of neglect. Or maybe my palate changed.
My daughter, however, loves salad. We eat it regularly with meals at home and there must be a shareable portion, if we are out for dinner, from either her daddy’s plate or mine. Even though she is a salad lover, I know the plight of those little ones who are not. My easy solution is to add a whole bunch of yummy things to make it taste all the better.
For the Ultimate BLT Salad, you will need…
¼ head Romaine lettuce, washed and chopped
3 sundried tomatoes, diced
3 slices bacon
1 egg
¼ cup red onion, diced
Sharp cheddar cheese, grated
Leo’s Originals Honey Mustard dressing
Do you see why I call it a BLT salad? It has all of the great things that come on one of my favorite sandwiches, sans the bread. This recipe is for an individual meal-sized salad, but of course you can adjust it to be a salad for many or a side dish if you want.
First, use a small pot of water to boil the egg for approximately 10 minutes. While the egg is boiling, chop the raw bacon into small pieces and fry in a small skillet until crispy. Remove bacon and set aside on a lined plate to get rid of excess grease.
Your egg should be boiled at this point. A little trick to get the egg to release from the shell easier is to shock it in ice water immediately after boiling. Just drain the boiling water and add ice to cover the egg with a bit of cold water. Let it sit for 5-10 minutes. After removing the shell chop or slice the egg–the choice is yours.
Now, all you have to do is assemble. The lettuce goes on the bottom and is topped with all of the veggies and protein. Add a little grated cheese and dressing. You could use another dressing, but I think the Honey Mustard works best to keep the flavors similar to a classic BLT.

Ingredients
- ¼ head Romaine lettuce, washed and chopped
- 3 sundried tomatoes, diced
- 3 slices bacon
- 1 egg
- ¼ cup red onion, diced
- Sharp cheddar cheese, grated
- Leo’s Originals Honey Mustard dressing
Instructions
- Boil egg. Place in ice bath to cool once cooked.
- Chop raw bacon and fry until crispy.
- Remove excess grease and cool.
- Remove the egg shell and chop or slice the egg.
- Assemble the salad starting with the lettuce on the bottom and then adding other vegetables, egg and bacon.
- Sprinkle with grated cheese over the top.
- Serve with Honey Mustard dressing.
