Some of you may know and others may not, but we have a special arrival coming this week. Well, not us, but a very important member of our staff. Amanda Hill and her husband, Erik, are anxiously awaiting the arrival of their first baby. By the time you read this, they probably will be holding their bouncing baby boy for the first time, and we are all so very excited for them.
A few weeks ago, some of the ladies put together a baby shower for Amanda. I was honored to help out and got to try my hand at some gourmet popcorn. I had one savory, that I will save for another time, and one sweet that I wanted to share with you today. It has chocolate, marshmallows and all sorts of yummy things blended in it. To me, it’s like a s’more and a German chocolate cake exploded over popcorn.
For Chocolate Delight Popcorn, you will need…
3 bags buttered microwave popcorn, popped
2 cups mini marshmallows
1 cup sweetened coconut, shredded
3/4 cup slivered almonds
12 oz. chocolate almond bark
This popcorn has a little bit for everyone. It covers your chocolate lovers, coconut lovers, marshmallow lovers… You get the point. The best part is, it only takes a few minutes to make and cools in about 30 minutes.
First things, first. Place the popped popcorn into a large bowl and try to remove any of the unpopped kernels, if possible. Your bowl will need to be REALLY big. Add in the marshmallows, coconut and almonds. I use my hands to mix this as to not break up the popcorn kernels too bad.
Then, following the instructions on the package, melt your chocolate. I like the kind that goes in the microwave. Just make sure not to overcook it. Otherwise, you will have a clumpy mess.
Once melted, pour over the popcorn mixture and gently fold it in to cover all of the popcorn and yummy bits.
Finally, spread your popcorn out on either wax paper or parchment paper to dry. You will want it to be in a thin layer to dry out quickly, although a few clumps won’t hurt. Allow to dry until hard to the touch. This usually only takes about 30 minutes.
As you can see, this popcorn is great for a shower or party. It is even a great after-school snack at my house. Congratulations to the Hills on their new bundle of joy! We cannot wait to meet him.

Recipe: Chocolate Delight Popcorn
Summary: Sweet gourmet popcorn made easy
Ingredients
- 3 bags buttered microwave popcorn, popped
- 2 cups mini marshmallows
- 1 cup sweetened coconut, shredded

- Fill a very large bowl with the popped popcorn, removing any unpopped kernels.
- Add in marshmallows, coconut and almonds.
- Mix well by hand to combine.
- Melt chocolate per package instructions, taking special care not to overcook.
- Pour the chocolate over the popcorn mixture and gently fold in to cover everything.
- Remove to a large piece of wax or parchment paper to dry.
- Once dry, serve immediately or store in an air-tight container.

Number of servings (yield): 15-20
