It’s funny how something as simple as food can bring back so many memories. Turkey makes most people think of Thanksgiving. Peach Cobbler means summer is here. Others, like this week’s recipe, may not have as wide of a following. But it definitely brings back memories of Easter and my grandparents.

You’re probably thinking deviled eggs, crawfish boil or pea salad.  Sorry, you aren’t even close. I can remember my Grandma making this dish and the delight my sister and I had when we saw the bright colored bowl of happiness on the table.

For Pink Fluff, you will need…Pink Fluff
12 oz. pineapple tidbits
10 oz. maraschino cherries
8 oz. whipped topping
3 oz. cherry jello powder
1 cup small curd cottage cheese
1 cup small marshmallows
1/3 cup chopped pecans

Pink Fluff is a glorious mixture of my happy memories. From fish fries with my Granddaddy to watching my Grandma’s beautiful Bluebonnets blow in the wind while waiting for the Easter egg hunt to begin. This is the perfect spring dessert for a family gathering.

First, drain the pineapple to remove any extra juice. Then, cut the cherries in half and add  to the pineapple in a large bowl.

Sprinkle the jello powder over the fruit, followed by the pecans and marshmallows. Mix in the cottage cheese.

Finally, fold in the whipped topping until everything is a lovely and bright shade of pink. Refrigerate until ready to serve.

This is an amazing, quick treat that can be made last minute. And it allows you to be a part of the fun instead of stuck in the kitchen. My grandparents are long gone, but the memories we made will always remain. Especially when I make a great big bowl of Pink Fluff. From all of us at Texas Table Top, enjoy!

Pink Fluff

  • 12 oz. pineapple tidbits

  • Slice the cherries in half.
  • Combine fruit in a large bowl.
  • Mix in the jello powder.
  • Stir fruit mixture together with the marshmallows, pecans and cottage cheese.
  • Fold in whipped topping.
  • Chill and serve.
