Have you ever had a party just for the sake of having one? For instance, you have a party just because the sun is shining or you got a good rain. How about a party in honor of National Chip and Dip Day? Well, that’s what we’re doing with some of our neighbors this weekend.

Why not? The weather is amazing in Waco right now. We got some much needed rain earlier this week, and now we are having the most beautiful spring days. To top it off, Sunday is a day of celebration in the chip and dip world. In honor of the anchor of most of the parties, I’m going to share my recipe for Garlicky Onion Dip.

For Garlicky Onion Dip, you will need…Garlicky Onion Dip - ingredients

1/2 sweet onion, chopped
1 tbsp. fresh garlic, chopped
1 tbsp. olive oil
1/2 cup light mayonnaise
1/2 cup light sour cream
1 tsp. salt
pepper to taste

This is one of my favorite go-to party recipes. It’s a creamy dip that’s perfect for every event and takes no time at all to make. When I need something homemade in a pinch, this is my munchie of choice. I’ve used it for everything from baby showers to backyard cookouts.

First, in a small sauce pan, heat the olive oil. Once warm, add in the chopped onion, garlic, salt and pepper. Cook over medium heat until the onions are translucent.

While your veggies are cooking, mix together the mayonnaise and sour cream in a medium bowl.

Once the onions and garlic are cooked, remove them from the heat and let them cook for a minute or so. Then add them to the cream mixture and stir until well combined. Cover the dip and refrigerate for at least one hour before serving.

If you can make it a day prior, it will taste even better as it gives the vegetables and cream flavors time to marry. That way you get the sweetness from the onion and the heat from the garlic combined with the creamy richness of the mayo and sour cream. You can serve it with crackers or corn chips, but the only way I eat this dip is with a good ol’ potato chip.

So, invite some friends over this weekend and enjoy the warm breezy days we’ve been waiting for all winter. Celebrate National Chip and Dip Day in your own special way.

Garlicky Onion Dip - final

Ingredients

  • 1/2 sweet onion, chopped
  • 1 tbsp. fresh garlic, chopped
  • 1 tbsp. olive oil
  • 1/2 cup light mayonnaise
  • 1/2 cup light sour cream
  • 1 tsp. salt
  • pepper to taste

Instructions

  • Saute seasoned onion and garlic in olive oil.
  • Combine mayonnaise and sour cream in a mixing bowl.
  • Stir cooked onions and garlic into cream mixture.
  • Cover and refrigerate for at least one hour prior to serving.

   

Cooking time (duration): 10 minutes, chill overnight

Number of servings (yield): 8-10
