Golden Mint Truffles

I found it! The end of the rainbow where the gold is hidden. It won’t make me rich, but it sure does taste good. I’m talking about “out-of-this-world good” truffles that don’t take forever to make.
And since I will be very busy this weekend with a certain little someone’s birthday (Happy birthday, Butters!), I thought this might be just right for Sunday dessert. These also are a festive dessert if you’re headed to a St. Patrick’s Day shindig.

It’s finally here! We are getting our daylight back. Some people dread losing an hour of sleep this time of year, but I get so excited about it. The trade off to get the extra hour of sunshine is so worth it—in my opinion. It gives us extra time to work in the yard, fly a kite, take our kids to the park and just enjoy spring.
I love when we spring forward. I also am a big fan of Spring Rolls. So this week, I decided that I would take a turn from the traditional Spring Roll and make something to celebrate the extra hour of daylight we get starting on Sunday. And you all know how much I like breakfast.

Sometimes life just calls for comfort food. You know, that recipe that Mom used to make or something that brings back a special memory. I wish I had time to make for Butters some of the dishes that my mom made for me growing up. To be perfectly honest, I still don’t understand how my mom did it. She had three kids and a husband to feed, plus a full-time job. Then there were all of the kid activities, church responsibilities and just taking time to care for all of us.

If your house is anything like mine, you don’t always get to celebrate a holiday on the actual day. Valentine’s Day is no exception at our house, either. A few weeks ago, I mentioned that my mom-in-law’s birthday happens to be the same day. Then there is sweet Butters running around giving hugs to anyone who will stand still. So, my husband and I don’t get to celebrate Valentine’s on its normal day.

Some of you may remember me talking about the Dinner Tonight! Cooking School I was going to attend. Well, I went and got some great information about healthy and affordable meals for my family. Put on by the Texas A&M AgriLife Extension Service, the Dinner Tonight program serves as a way for the county Extension agents to help families live a healthier lifestyle.
Many times we don’t think about the fat, sodium or calories included in our evening meal. With busy schedules to keep up with, it sometimes is hard to resist the urge of the drive-through fast food place down the street. And although many of them now have healthier options, I can tell you from personal experience that isn’t what I end up ordering.
