Beefy Spaghetti Squash Bake

I love pasta. Really, I think I must have been Italian in my past life. I would eat pasta every day if my waistline could handle it. See, my problem is moderation.
Just like most everything else in life, pasta must be eaten in moderation. When I think of pasta, I think about the biggest bowl of spaghetti or a giant plate of chicken alfredo. And even though you can eat those things every once in a while, you shouldn’t have them every day.

We Texans love our chili. Everyone’s recipe is a little different—whether you make it with extra jalapenos, beans, no beans, thick, thin, venison or lean beef. It’s the perfect dinner option for a cold winter night.
At Texas Farm Bureau, we have an annual chili lunch, hosted by the Commodity and Regulatory Activities Division, to show our appreciation to the more than 300 employees who donate through our United Way campaign. It’s something we all look forward to time and again.
Ned Meister and his team use the Texas Beef Council’s Perini Ranch Steakhouse Chili recipe, and then each add a little twist to spice it up.

One of my husband’s favorite meals is Slow Cooked Carnitas—a quick and easy pork roast, shredded and served with a sweet and savory sauce.

Did you know my birthday is Sunday? Of course you did. You already have my gift in the mail, right? Okay, so I’m kidding about the gift, but Sept. 18 is my birthday. What makes the day even more special is sharing it with one of my favorite people—my mom, Bettilu. I was born on my mom’s 28th birthday and, according to her, she stopped having birthdays when I was born. (In “mom math” that makes me older than she is.) Sept. 18 also is National Cheeseburger Day. Homemade burgers are a favorite birthday meal at our house, but this year I found a low-carb option to celebrate: Bacon Cheeseburger Quiche. Not only is it yummy, but the crustless quiche fits into my low-carb diet.
