Have you ever had something stuck in your head and it just won’t get out…like a song, an idea or even a recipe? This seems to happen to me constantly. If it is a song, I have to sing it out loud before I can get it out. An idea, yep, I have to write it down or type it into my phone. I just can’t seem to focus once something gets stuck in there. I guess you could call this a character flaw.

What is it about chicken that just warms us to the core? I have always looked to chicken as a comfort food. Think about it—Roasted Chicken with Dressing, Chicken Pot Pie, Fried Chicken…There is just something about chicken that makes me feel at home. Unfortunately, chicken takes time to cook and prepare. I don’t know about you, but my schedule won’t allow a big chicken dinner unless it is for Sunday supper. I found a solution in my slow cooker.

This week, Texas Farm Bureau has been celebrating Food Check-Out Week. Food Check-Out Week is all about promoting Texas agriculture, sharing facts about food and opening the lines of communication between farmers and consumers.
As someone who works with farmers and ranchers, and as a consumer of their products, I get to see both sides of the agriculture conversation. I really feel like I have the best of both worlds because I get to see the good in both all of the time. I see how much the farmers and ranchers care about their jobs and their families, and I feel safe knowing that I am serving safe and affordable food to mine. In honor of Food Check-Out Week and Texas agriculture, I decided to highlight some of the wonderful crops and commodities that are grown right here in our home state.

As I mentioned, Texas rice farmers make the best rice dishes. I learned last week as a judge of the Colorado County Rice Dish Contest that the fine Texas rice farmers down there really know how to make a good thing—Texas rice—even better. The grand prize went to Colorado County Farm Bureau member Helen Pavlicek for her Rice Meat Patties. One bite of this recipe, and I knew we had a winner.
In honor of Helen’s delicious rice dish, I thought I’d try it at home and then share it with our Texas Table Top readers. This recipe was a hit at our house, and I’m sure it will be at yours, too.

What cook doesn’t have a collection of rice dish recipes? Rice is one of those pantry staples that always comes through in a pinch, bringing a few ingredients into a complete, healthy and tasty meal. Lucky for Texans, we have plenty of rice right here in the Lone Star State. Texas rice farmers grow 1.4 billion bushels each year—talk about local food!
A few months ago, I was asked to judge the Colorado County Rice Dish Contest, presented by Colorado County Farm Bureau and the Colorado County Soil and Water Conservation District. So, last Tuesday I traveled to Columbus, Texas, to see what it was all about. The contest is open to all Colorado County residents—many of whom are Texas rice farmers.
