As a Texan, I am required to have so many Tex-Mex meals a week, and a few weeks ago I missed my scheduled doses. Okay, so I am not required to eat Tex-Mex, but I sure do like it. Sometimes you try out a new dish, and it isn’t exactly your best work. Maybe it didn’t go over so well and saving it for leftovers isn’t the best idea.
Trust me, I’ve had plenty of meals like that. But Jessica’s post earlier this week got me thinking. Just how many times do I throw out leftovers without ever eating another bite past the first meal? Way too much. So this year, my New Year’s resolution is twofold: cook more and reduce the amount of food I waste by eating the meals that I cook more than once.

What is it about chicken that just warms us to the core? I have always looked to chicken as a comfort food. Think about it—Roasted Chicken with Dressing, Chicken Pot Pie, Fried Chicken…There is just something about chicken that makes me feel at home. Unfortunately, chicken takes time to cook and prepare. Dad, Daddy, Papa, Pops… Whatever you call them, it’s time to celebrate our fathers. Growing up, I fondly remember Father’s Day as a day that the whole family got together—multiple generations under one roof to celebrate with food.
Typically, this meal was centered around some sort of beef. Let’s face it—most men are the “meat and potatoes kind,” but every once in a while, a change to the menu is welcomed. Such is the case of this recipe. Now, this is not your average Chicken Spaghetti. There is no celery, bell peppers or sour cream. This is a rich, creamy version of Chicken Spaghetti with spinach and mushrooms. It reminds me of something Olive Oyl might make Popeye for Father’s Day.

Can you smell that? It’s the unmistakable aroma of the 2012 grilling season. With another Memorial Day in the books, the summer is off to a running start with the return of hot temperatures and cookouts. Grills across the country are being cleaned, charcoal and wood stocked and refrigerators filled in preparation for the season.
Summer time reminds me of time spent with grandparents in backyards with sprinklers running and meat smoking.
My grandpa especially loved his station at the grill. As a veteran, his patriotism was almost matched by his love of good food, as his round belly proved.
