Well, we are officially into summer. The days are longer, and the weather is certainly warmer. To be quite honest, this is usually when I pass off the cooking responsibilities to my husband so I don’t have to stand in a hot kitchen while everyone else is outside having fun.
With the 4th of July holiday coming up, and since it is falling in the middle of the week, I thought I would give him a little reprieve, though. I figured out a way for both of us to play all day without worrying about what was for supper.

Nothing says summer more than taking a big bite of a plump, fresh Texas peach and having the juice drip down your chin. Fresh fruits and vegetables are found in abundance this summer at farmers markets all over the state.
I love wandering a good farmers market. The bright colors, the hustle and bustle, the great people watching—and the chance to meet the farmers who grew the fresh produce before me.
There are always some items I expect to see, like tomatoes picked straight from a vine or peaches plucked from a Hill Country tree.

Dad, Daddy, Papa, Pops… Whatever you call them, it’s time to celebrate our fathers. Growing up, I fondly remember Father’s Day as a day that the whole family got together—multiple generations under one roof to celebrate with food.
Typically, this meal was centered around some sort of beef. Let’s face it—most men are the “meat and potatoes kind,” but every once in a while, a change to the menu is welcomed. Such is the case of this recipe. Now, this is not your average Chicken Spaghetti. There is no celery, bell peppers or sour cream. This is a rich, creamy version of Chicken Spaghetti with spinach and mushrooms. It reminds me of something Olive Oyl might make Popeye for Father’s Day.

Sometimes I have a craving for certain foods. Not crazy ones like when I was pregnant with Butters, but for things that are spicy or sweet. Usually the stuff that is really bad for me, but I eat it anyway because I have no will power. However, sometimes my cravings are good for me.
Take, for example, Corn Salsa. I make it with almost all fresh ingredients, with very little salt and no oil. And since sweet corn is ready in Texas, I thought this would be the perfect opportunity to share one of my “good for you” food cravings.

Can you smell that? It’s the unmistakable aroma of the 2012 grilling season. With another Memorial Day in the books, the summer is off to a running start with the return of hot temperatures and cookouts. Grills across the country are being cleaned, charcoal and wood stocked and refrigerators filled in preparation for the season.
Summer time reminds me of time spent with grandparents in backyards with sprinklers running and meat smoking.
My grandpa especially loved his station at the grill. As a veteran, his patriotism was almost matched by his love of good food, as his round belly proved.
