This time of year as the weather turns colder (well, in Texas, just the days it decides to feel like winter), one of my favorite comfort foods is a good, warm soup or stew. Late last week, I was feeling a bit under the weather and decided to make Caldo de Res, or beef soup, that I used to order all the time when I lived in Seguin.

One of the great things about Caldo de Res and Caldo de Pollo (chicken soup) is that it is versatile. Everyone makes it a little bit differently, but here’s how I make mine. I hope you enjoy it.

Beef Stew is such a hearty and warming meal. Did you know there are more than 90 different types of stew made around the world? The basics of stew are chunks of meat with a broth and vegetables. It is an easy meal to make and can feed several people—perfect for a big family.

My mom used to make stew for us when we wouldn’t eat our vegetables. She would take stew meat, broth and whatever leftover vegetables we had and simmer them together to make a stew. It worked! I would eat everything in the bowl. Fortunately, Butters likes veggies way more than I did growing up, but I still like the idea of sneaking in some of the ones she might not eat otherwise.

Broccoli Salad

I have a confession to make–I haven’t always liked vegetables. Don’t get me wrong. I grew up eating the standard vegetables that my mother so lovingly cooked for each meal. But if it was any raw veggie other than a carrot, I wasn’t going to eat it.

Now that I am a mother, I’m starting to see that my aversion to veggies wasn’t passed on to my daughter. In fact, some of her favorite foods are raw avocados and fresh tomatoes. Now add to the list, at the ripe ol’ age of three, a healthy appetite for salad. I love that she is so willing to eat raw veggies and am proud that she is already eating things that it took me years to appreciate. She also is a big fan of cooked broccoli, so I decided to see if she liked Broccoli Salad.

A few weeks ago, I shared a recipe for Potato Soup Mix in a Jar that I gave to my co-workers for Christmas. After returning from the holidays, I was met with rave reviews from all who had tried it. So, when I was asked to cook up another soup to keep us warm during these winter months, I jumped at the chance.

Nathan Smith suggested I try Reata’s Jalapeno Cilantro Soup. I’ve heard through the grapevine that this is a delicious soup. And, since jalapenos and cilantro are two of my husband’s favorite ingredients, I decided to give it try. This is a creamy, silky soup with tons of fresh veggies to give it amazing flavor.
