Golden Mint Truffles

I found it! The end of the rainbow where the gold is hidden. It won’t make me rich, but it sure does taste good. I’m talking about “out-of-this-world good” truffles that don’t take forever to make.
And since I will be very busy this weekend with a certain little someone’s birthday (Happy birthday, Butters!), I thought this might be just right for Sunday dessert. These also are a festive dessert if you’re headed to a St. Patrick’s Day shindig.

Traditions are big in our family. Like brunch and presents on Christmas day at my parents’ house and Fruit Cake Cookies. We’ve had these cookies every year for as long as I can remember. Little known fact… Today is National Pecan Cookie Day! That is a pretty big day in my house for several reasons. Number one, I make cookies. Number two, I make cookies with the Texas state nut. Number three, I make cookies with Texas pecans, chocolate chips and sea salt. Now do you see why it is such a happy day at my house?
These cookies are so good they take two days to make. Don’t worry, you won’t actually be baking for two days. You just make the dough 24 hours in advance so it has time to become the most wonderfully crispy and chewy cookie you have ever had. I can already smell them baking, so let’s get started.

Have you ever been to a cookie exchange? You know, one of those parties where everyone brings three or four dozen cookies and swaps them with friends for the holidays? If you haven’t been, try to make it to one. They are a lot of fun.
Today, I’m sharing a recipe that I’ve taken to a cookie exchange or two. Everything Cookies are oatmeal cookies filled with all kinds of yummy extras: dried cranberries, white chocolate chips and, of course, Texas pecans.

While I’m not a fan of scooping the insides for a jack-o’-lantern, I love sweet pumpkin treats that signal the cooler weather, changing leaves and comfy scarves of fall. Amanda makes an office favorite–Iced Pumpkin Cookies–that gets us all in the fall mood. She made them recently and shared the photos for today’s Texas Table Top recipe.
