I was finishing my degree, and he was working to keep us fed. I look forward to the Easter holiday every year. It is kind of like Christmas in spring. Spending time with family and remembering the true meaning of the day are very important to me. Of course, there’s also the annual Easter egg hunt after the sunrise church service on Sunday morning and an amazing brunch provided by the ladies of the church. We all leave filled with the spirit and with breakfast. However, in our family, that isn’t where the food ends. We continue to celebrate all day with ham, potato salad and green bean casserole for lunch. The kids all head out to the backyard to see if the Easter Bunny left more eggs, and then we have Banana Pudding as an afternoon snack. What is it about Banana Pudding? I honestly don’t think I have ever met someone who doesn’t like it.

On your mark, get set, DIG! It’s planting season for summer vegetables, and Texas gardeners are preparing their onions, tomatoes, summer squash and leafy greens—just to name a few.
For this girl, fresh veggies from a garden are heavenly. In celebration of spring planting, I decided to share my recipe for Zucchini Boats. They are full of veggies and are the perfect side dish for pretty much any main dish you plan to cook. Plus, I am totally in love with the colors of spring and summer vegetables. They are so bright and vibrant.
For Zucchini Boats, you need…
2 medium, firm zucchinis
1/2 sweet onion, chopped
1 clove garlic, minced
1 Roma tomato, chopped
1/2 cup Panko breadcrumbs
1/2 cup mozzarella cheese, shredded
1 tsp. dried oregano
olive oil
salt and pepper

Have you ever had a party just for the sake of having one? For instance, you have a party just because the sun is shining or you got a good rain. How about a party in honor of National Chip and Dip Day? Well, that’s what we’re doing with some of our neighbors this weekend.
Why not? The weather is amazing in Waco right now. We got some much needed rain earlier this week, and now we are having the most beautiful spring days. To top it off, Sunday is a day of celebration in the chip and dip world. In honor of the anchor of most of the parties, I’m going to share my recipe for Garlicky Onion Dip.
