Pamela Brown’s Italian Meatballs with Sauce

I do not know Pamela Brown, but a member of the Texas Farm Bureau staff does. Cindy Wennin, our senior graphic designer, is a good friend of mine. And a good friend of hers is Pamela Brown. Pamela was nice enough to share her recipe with Cindy and the story behind it for this week’s Texas Table Top recipe.
These meatballs are the real deal. No short cuts or lack of elbow grease on these guys. Several years ago, Pamela married into an Italian family, and her husband’s grandmother taught her to make authentic Italian meatballs—all without speaking a word of English. I just love family recipes, so I knew I had to try this one.

Welcome, Autumn! Oh, how I’ve missed your cool breezes and falling leaves. I must say, fall is one of my favorite times of the year. I have love for all of the seasons, but this time of year is just so refreshing. The tastes, the smells, the colors…amazing! Another bonus of this beautiful season is that it gives me an opportunity to cook without melting. My ol’ kitchen can certainly put off some heat.

Well, we are officially into summer. The days are longer, and the weather is certainly warmer. To be quite honest, this is usually when I pass off the cooking responsibilities to my husband so I don’t have to stand in a hot kitchen while everyone else is outside having fun.
With the 4th of July holiday coming up, and since it is falling in the middle of the week, I thought I would give him a little reprieve, though. I figured out a way for both of us to play all day without worrying about what was for supper.

One of my husband’s favorite meals is Slow Cooked Carnitas—a quick and easy pork roast, shredded and served with a sweet and savory sauce.
