The new year has started, and it’s time to start following our New Year’s resolutions. What are you planning to do? Eat healthier, work out more or maybe cook more?

Mine is to cook more. You may think I cook constantly, but I really don’t. With the convenience of restaurants and fast food, many of us don’t cook like our parents or grandparents used to. I plan to change that at our house this year. What better way to start than with Spaghetti Pie, a recipe to honor National Spaghetti Day today.

I know I write a lot about meat in my blogs. I admit it…I love meat. However, I do understand there are others who don’t share my love for a juicy steak or a perfectly roasted chicken breast. In fact, my dear friend Ann doesn’t eat meat except on a rare occasion. She doesn’t have a problem with others eating meat, doesn’t consider herself a vegetarian and even cooks it for her growing family. She just doesn’t care for the taste and texture.

Everyone likes different things at my house. I like chicken and spinach, my husband likes chicken and cheese, and our two-year-old loves spinach and cheese. Cooking for a family can be challenging, but that’s what makes it fun for me. I love meals that sound fancy but are really simple to make. Take Chicken Rockefeller,  for instance–a chicken and cream based dish with spinach and cheese, and pasta thrown in for good measure.
 
Before you start, it’s a good idea to have your cooking utensils/tools/gadgets ready. I’m the world’s worst about this. I’ll get two or three steps into a recipe and realize I forgot something. For Chicken Rockefeller, you will need the following:
