Sometimes life just calls for comfort food. You know, that recipe that Mom used to make or something that brings back a special memory. I wish I had time to make for Butters some of the dishes that my mom made for me growing up. To be perfectly honest, I still don’t understand how my mom did it. She had three kids and a husband to feed, plus a full-time job. Then there were all of the kid activities, church responsibilities and just taking time to care for all of us.

Some of you may remember me talking about the Dinner Tonight! Cooking School I was going to attend. Well, I went and got some great information about healthy and affordable meals for my family. Put on by the Texas A&M AgriLife Extension Service, the Dinner Tonight program serves as a way for the county Extension agents to help families live a healthier lifestyle.
Many times we don’t think about the fat, sodium or calories included in our evening meal. With busy schedules to keep up with, it sometimes is hard to resist the urge of the drive-through fast food place down the street. And although many of them now have healthier options, I can tell you from personal experience that isn’t what I end up ordering.

Sometimes you try out a new dish, and it isn’t exactly your best work. Maybe it didn’t go over so well and saving it for leftovers isn’t the best idea.
Trust me, I’ve had plenty of meals like that. But Jessica’s post earlier this week got me thinking. Just how many times do I throw out leftovers without ever eating another bite past the first meal? Way too much. So this year, my New Year’s resolution is twofold: cook more and reduce the amount of food I waste by eating the meals that I cook more than once.

What is it about chicken that just warms us to the core? I have always looked to chicken as a comfort food. Think about it—Roasted Chicken with Dressing, Chicken Pot Pie, Fried Chicken…There is just something about chicken that makes me feel at home. Unfortunately, chicken takes time to cook and prepare. I don’t know about you, but my schedule won’t allow a big chicken dinner unless it is for Sunday supper. I found a solution in my slow cooker.
