The sun is shining! The sun is shining! I am so very excited the days are getting longer and we can enjoy the amazing weather we are having. Now of course, it would be better if we could get some late night, early morning showers to pull us out of the drought.

I will be spending the weekend trying to soak up just a little more of this glorious cool weather before the Texas heat sets in. It’s also a holiday weekend so we get a little extra time. If you haven’t noticed, holidays at my home always include party food. This week is no exception.  See at our house, Memorial Day is not just a day to remember, but a day of celebration.  And we look at it as the unofficial start of summer too.

For Tangy Fruit Salsa, you will need…Tangy Fruit Salsa
2 kiwis
2 Golden Delicious apples
6 oz. blueberries or raspberries
1 (16 oz.) carton strawberries
2 tbsp. white sugar
3 tbsp. apricot preserves

Fruit is one of my favorite spring and summer treats. And since the melons and peaches aren’t quite ready yet, I figure I should get my fill of berries before it gets too hot for them.

First things, first. After rinsing all of the fruit, you’ve got some chopping to do. It won’t take long, especially with a sharp knife. Peel and dice both the kiwis and the apples. Make sure to core the apples as well. Don’t forget to dice the strawberries, too.

Then mix all of the fruit together in a large bowl.

Sprinkle on the sugar and then stir in the preserves. If you aren’t a fan of apricot, feel free to use your favorite preserve. Now, you just need to cover and refrigerate for at least 15 minutes before serving.

I am so excited that my friend Amber from Texas Farm Bureau shared this recipe. She suggests serving them with cinnamon sugar pita chips, so I think I will make some homemade cinnamon crisps to scoop this up with. From all of us at Texas Table Top, enjoy!

Recipe: Tangy Fruit Salsa

Ingredients

Tangy Fruit Salsa

  • 2 kiwis
  • 2 Golden Delicious apples
  • 6 oz. blueberries or raspberries
  • 1 (16 oz.) carton strawberries
  • 2 tbsp. white sugar
  • 3 tbsp. apricot preserves

Instructions

  • Rinse and pat dry all of the fruit.
  • Peel and dice the kiwis.
  • Peel, core and dice the apples.
  • Dice the strawberries.
  • Combine all of the fruit in a large bowl.
  • Sprinkle with sugar and mix well.
  • Stir in the preserves.
  • Cover and chill for at least 15 minutes before serving.
  • Serve chilled with cinnamon chips.
