I have strawberries running through my mind right now.  I get so excited when I see those little red beauties show up in the produce section of the grocery store.  I know that means summer is coming.  And even though the Texas weather has been a bit unpredictable this week, I still can’t get those strawberries out of my head.

Another thing that makes me think of strawberries is the Poteet Strawberry Festival, and it just happens to be going on right now.  For more than 60 years, the people of Poteet, Texas, have been sharing and celebrating their amazing strawberry crops with visitors near and far.  Poteet is even recognized as the “Strawberry Capital of Texas.”

So this week, in honor of this really cool festival and my need for strawberry therapy, I decided to make you something sweet, refreshing and—dare I say—good for you.

For Strawberry Banana Smoothies, you will need…Strawberry Banana Smoothies
1 lb. fresh strawberries
2 bananas
1 cup Greek yogurt, vanilla flavored
1 cup orange juice
2 tbsp. honey
2-1/2 cups ice

This recipe is super easy and great for getting the kids involved in the kitchen. Butters loves cooking with me, so this is one on which I let her help.

First things, first. Wash and pat dry the strawberries. Hull the strawberries and cut in half. Some may need to be split again depending on the size of the berry. Some of mine were huge.

Then peel and slice your bananas into large chunks.

Place all of the ingredients, minus the orange juice, in the blender. Turn on the blender and slowly add the orange juice.

Run the blender until everything is smooth and well combined. Have a wooden spoon on hand to dislodge any ice that might get stuck in the blade. Just remember to turn the blender off before inserting the spoon.

If you prefer your smoothie a little thicker, add more ice. If you want to thin it out, add just a bit more orange juice. I just love this smoothie because it tastes like summer. And even though it is not quite here yet, I wouldn’t want to deny my family this healthy treat. As you can see, these are a big hit in my house, and “Butters approved.”

Strawberry Banana Smoothies

Ingredients

  • 1 lb. fresh strawberries
  • 2 bananas
  • 1 cup Greek yogurt, vanilla flavored
  • 1 cup orange juice
  • 2 tbsp. honey
  • 2-1/2 cups ice

Instructions

  • Wash and dry strawberries.
  • Hull strawberries and cut in half lengthwise.
  • Peel and slice bananas into large chunks.
  • Place all ingredients, except for orange juice, in the blender.
  • Turn blender to high and slowly add orange juice.
  • Smoothie is ready when mixture is well blended.
  • Add ice or orange juice to reach desired consistency.

Prep time (duration): 5 minutes

Number of servings (yield): 4
